To kick start my Monday motivation i decided to free some of my Sunday time up by creating some healthy flapjacks.
If you love coconut, chocolate, and anything flapjack, then this recipe you really need to try. It’s simple and easy to make, but really cures any sweet cravings you might encounter on your hungover Sunday feast, so give it a try and let me know how yours turn out by tagging me in your pics on Instagram @Rebekahjwright or through the Facebook page.
- 1 cup of desiccated coconut
- 1 cup of oats
- 1 cup of ground almonds
- 2 eggs
- 1/4 cup of honey
- 1/4 cup of melted coconut oil
- 1/2 tsp baking powder
- 2 TBSP cacao nibs
- 50g Dark Chocolate,chopped
(If you want to make protein flapjacks, then just add half a scoop of your selected Chocolate protein whey.)
Preheat the oven to 180c
Combine the coconut, oats, ground almonds and baking power in a large mixing bowl. Stir the eggs, honey and melted coconut oil into the mixture, finally fold in the cacao nibs and dark chocolate.
Grease or line a square baking tin and pour the mixture into the tray* bake for 20 minutes until golden on top and allow to cool for a further 20 minutes before slicing and serving!
*Silicone trays work best for this!
