The ultimate banana pancakes 

If you don’t already know tomorrow is Shrove Tuesday which is historically the time to feast before the period of Lent ( in Christianity the 40 day fast) however, in modern Britain it is popularly known as Pancake Day, I personally don’t think we need pancake day as an excuse to eat pancakes, but with it being so close, I thought I’d share my current favourite pancake recipe with you all!

I wanted to find a nutritious pancake recipe to suit the healthy eating hype, but which was  also filling, healthy, and protein packed to fuel my workouts. I came across this flour-less, easy to make, banana pancake recipe.

What you will need:

(For 3 medium sized pancakes)

-1 Banana

-2 eggs

Tip

Cook on a really low heat for best results!

… And that’s it!

Unless you want to add any yummy toppings, which I added 2 squares of dark chocolate on the top of mine, which melted and worked as a healthy alternative to chocolate spread or you can add a scoop of your favourite protein powder for some extra nutrition before or after a workout!

I used my Morphy Richards Easy Blend Blender to blend all the ingredients together (i found this easier for a smoother batter but any normal had wisk will work just as good). I fried them in 1 calorie cooking spray on a low to medium heat for 2 minutes each side.

These taste so sweet and fluffy, even I was very surprised as they contained no added sugars, and didn’t need any flour! They were so easy to make, I would definitely recommend trying them, and you can even add your favourite toppings, whether it’s succulent strawberries or chocolate chips!

For the smoothie:

-2 cups of water melon

-A handful of blueberries

-2 kiwi’s

– 4 cubes of ice

-200ml of water

I put all the ingredients in a blender, and blended for a few minutes.

The great thing about these smoothies is that you can make them the night before and store them in the fridge for when you’re in a hurry. This is a perfect idea for breakfast or brunch, and it really did cure my sugary cravings.
